Buttery Snack Cake with Coconut Broiled Icing

Ingredients

Cake:
1 c. sugar
1/3 c. butter or margarine
1 egg
3/4 c. milk
1 tsp vanilla
1 1/2 tsp baking powder
1/2 tsp salt
1 1/4 c. flour

Frosting:
1 c. flaked coconut
1/3 c. brown sugar
1/4 c. butter or margarine
2 Tbsp milk

Directions

Cake:

Mix sugar and butter together until soft and fluffy. Beat in the egg, milk and vanilla. In a separate bowl combine the baking powder, salt, and flour. Add flour mixture to cake mixture and beat just until combined. Spread into a greased 8x8 pan and bake at 350 degrees for 35 minutes.

Frosting:

Combine the brown sugar, butter, and milk together until smooth. Mix in the coconut.

When cake comes out of the oven, spread the frosting on the hot cake. Broil for about 2 minutes or until frosting is bubbly anf starts to brown.

I love this cake! I can eat so much of it because it tastes so yummy. This is the dessert that got me liking coconut!
