Coconut Curry Chicken Salad

Description

I cut the dressing recipe in half and I still have extra. This is so good!!

Ingredients

2 1/2 c. cooked chicken (about 4 breasts) cut into 1/2" cubes
3/4 c. sliced celery (about 2 ribs)
1/2 c. sliced green onion
1/4 cup finely sliced or shredded carrot
1/4 c. cashews
3/4 c. grapes (optional)
1/4 cup dried apricots, cut into 1/4" pieces (Optional)
1/4 cup finely sliced or shredded coconut(optional)

Dressing:
3/4 c. coconut milk
1/2 c. sugar
1/2 c. mayo
2 Tbsp curry powder
2 tsp ground ginger
1 tsp garlic powder
pinch of salt and pepper

Rolls, pita bread, or salad for serving


Directions

Toss all ingredients together, whisk together ingredients for dressing. Add the dressing slowly to the chicken mixture and stir until just coated - a little goes a long way! Top with coconut. Serve on a bed of greens or as a sandwich. You may substitute shrimp or add other dried fruits and nuts too. Serves about 4 people.
