Cucumber Salad

Recipe by a local Asian supermarket

Ingredients

2 lbs cucumber – shredded
2 tablespoon vinegar
1/2 tablespoon salt
1 1/2 tablespoon sugar
1 garlic clove, minced

Directions

Cut off both ends of the cucumber and shred it lengthwise, taking only the flesh not the seeds. In a bowl, add all the above ingredient and mix well. Add in the cucumber and mix well. Let it stand for 5 to 10 minutes. Squeeze out the juice and serve right away or chilled.

Optional: add 1/2 tsp of ground hot chilies with the sauce for spicy cucumber salad.
