Creamy Garlic Chicken Recipe

Ingredients

6 bone in skin on chicken thighs
salt and pepper to taste
2 tsp paprika
2 tsp dried basil
2 tsp dried thyme
2 tsp dried rosemary
olive oil
2 Tbs butter
1 large onion, minced
5 huge cloves of garlic
2 Tbs flour
1 cup chicken broth
1 cup milk or half and half
1/4 cup grated parmesan cheese
1/4 cup fresh basil, chopped
1/4 cup of fresh parsley chopped

Directions

Combine dry spices, salt and pepper and sprinkle / rub over the chicken thighs. Prepare other ingredients before starting. Preheat cast iron pan, add about a tablespoon of olive oil and chicken and cook for about 3 minutes on each side till golden brown. Remove from the pan, and remove any burned seasoning if necessary, leaving some seasoning and oil in the pan.

To make the sauce add butter and onions and cook for a few minutes until translucent, add garlic and cook for a minute, then add flour and mix in well cooking for 1 minute. Lower the heat and slowly add chicken broth while stirring to fully incorporate. Continue to cook, stirring until it thickens. Add milk, parmesan, and herbs and stir to combine and bring up to heat. Once simmering, add the chicken back to the pan and spoon over sauce, then place in oven at 400 degrees and cook until chicken reaches 165 degrees, about 20-30 minutes.

Serve over mashed potatoes or rice.
