Ingredients
200g extra firm tofu (1/2 package)
3 pieces garlic
small piece ginger
3 tbsp chili oil (https://youtu.be/oYz9GNg-8tw)
1 1/2 tbsp soy sauce
1 tsp dark soy sauce (optional if you have it)
1 1/2 cup leftover basmati rice (you can also use it fresh and it's okay)
1 tbsp curry powder*
10g Thai basil
Directions
Drain the tofu using your preferred method. I use a tofu press. Then mash it with a fork until broken into small pieces.
Chop the garlic and ginger.
Using medium heat and a nonstick pan add chili oil and once hot saute garlic and ginger until aromatic (20 seconds) then add the tofu and cook for an additional 5 minutes. Add part of soy sauce (1 tbsp) and cook another minute or two.
Add pre-cooked rice, curry powder, and remaining soy sauce. Cook for another 2 minutes until well mixed and heated through.
Add basil and stir in off heat.
