Test recipe for Tofu General Tso’s
Ingredients
Sauce
2 Tbsp soy sauce
1/4 hoisin sauce
1/4 rice vinegar
3 Tbsp tomato paste
3 Tbsp brown sugar
2 Tbsp cornstarch
2 Tbsp ground ginger
4 cloves minced garlic
1/2 tsp red pepper flakes
1 Tbsp cooking oil
Tofu and marinade
1 package (1 lb) firm tofu, pressed for at least 30 minutes
2 Tbsp soy sauce
2 Tbsp neutral cooking oil
1/4 cup cornstarch
Directions
Drain and press tofu. Preheat oven to 375 F. Slice into 1/2 cubes then toss with 2 tbsp oil and soy sauce. Let sit for at least 5 minutes to soak in. Then add 1/4 cup cornstarch and toss to combine. I find it easy to this in a sealable Tupperware or ziplock bag. Spread onto parchment lined backing sheet and cook for 30 minutes or until golden brown.
While cooking, mix together soy sauce, hoisin, vinegar, brown sugar, water, cornstarch and tomato paste. Cook garlic, ginger and pepper flakes in oil over medium heat until fragrant. Then pour in sauce mixture and bring to a simmer, stirring until it thickens. Take off heat and wait for tofu to finish cooking.
Once cooked, warm up sauce and toss tofu until well coated. Serve over cooked rice.
