Red Hot Chile Tofu

Got from a co-worker who got it from "Vegan Fire & Spice"

Ingredients

2 Tbsp tomato paste
1 Tbsp water
1 Tbsp soy sauce
2 tsp sake, or dry white wine
3/4 tsp sugar or sweetener
1/4 cup cornstarch
1/2 tsp salt
1 lb extra firm tofu drained and cut into 1/2" strips
3 Tbsp cold pressed canola oil
1/4 cup minced scallions
1 tsp minced garlic
1 tsp minced fresh ginger
1 tsp hot chili paste

Directions

Mix in a small bowl the tomato paste, water, soy sauce, sake, and sugar.

In a shallow bowl combine cornstarch and salt. Dredge the tofu strips in this mix and shake off the excess.

Heat 2 Tbsp on oil in a large skillet over medium heat. Cook tofu in batches until golden brown.

Heat remaining oil and add scalions, garlic, ginger and chili paste. Cook for 15 seconds to bloom the flavors. Add reserved tomato mixture and stir until blended. Add cooked tofu and toss to coat with sauce and cook until heated through, about 3 minutes.
