Cornbread

Ingredients

1 cup flour
1 cup yellow cornmeal
1/2 cup granulated sugar
1 teaspoon salt
3 1/2 teaspoons baking powder
1/3 cup canola oil
1 large egg
1 cup milk

Directions

This is sufficient for an 8x8 square pan or a 9" round skillet. You can do a double batch in a 9 x 13 pan.

Preheat the oven to 425 degrees.

Mix the dry ingredients well. Whisk together the oil, eggs, and milk. Make a "hole" in the dry ingredients and pour in the oil, milk, egg mixture. Gently fold together. If you over mix corn bread it will be tough. You should still have some small lumps of un-moistened flour.

Bake a single batch 8x8 for about 15-20 minutes, until the top is brown and an inserted toothpick comes out clean. It takes about 20-30 minutes for a double batch. You may want to check it 5 - 10 minutes early as it is easy to overcook it and have it be too dry.
