Spicy Garden Salsa

Description

A fresh, snappy garden style Mexican salsa.

Ingredients

Ingredients:

· 1 large Embassa jalapeno chile pepper (finely chopped in food processor)
· 1 whole clump of Garlic (finely chopped in food processor)
· 2 large Yellow onions (chopped)
· ¾ bag Baby carrots (chopped)
· 6 Roma tomatoes (chopped)
· ½ bunch Fresh cilantro (chopped)
· 1 TBS your favorite Mexican seasoning
· ¾ tsp cumin
· ¾ tsp salt
· 23 oz. V-8 Brand vegetable Juice
· 2 TBS Vinegar
· 14 oz. Ketchup (less if desired)

1. Fine blend the Jalapeno and Garlic in a food processor and add to a large mixing bowl.

2. Using the food processor, chop blend Onions, Carrots, Tomatoes, and Cilantro and add to mix.

3. Toss in Seasonings, mixing well. Then blend in blend in V8 juice, Vinegar and Ketchup mixing thoroughly.

4. Best if the salsa is allowed to stand in the refrigerator over night to let the flavors blend before serving. Serve with fresh tortilla chips or with any dish that desires a spicy salsa garnish.
