Ingredients
2 cups cherry tomatoes
2 tbsp olive oil
2 cloves garlic (sliced or minced)
1 cup chicken broth
2 tbsp oregano
1/2 tsp red pepper flakes (optional)
salt and pepper to taste
Fresh basil (optional)
Directions
Add oil, cherry tomatoes, garlic and 1/2 tsp salt over medium heat. Cook until the garlic is toasted then pour in the chicken broth and let it simmer. Simmer for about 10 minutes or until tomatoes burst.
Add oregano and red pepper flakes and then using a blender combine until smooth or the consistency you like. Add chopped basil if desired and salt and pepper to taste. Pour over spaghetti noodles.
