Description
This is a modified version of Americas Test Kitchen recipe.
Ingredients
2 tablespoons extra-virgin olive oil
1 teaspoon minced garlic
1 (28-ounce) can crushed tomatoes
1 tablespoon minced fresh basil leaves
1 tablespoon Red Wine Vinegar
Salt and ground black pepper
1/4 cup chopped onion (optional)
Directions
Heat oil. Once shimmering add garlic and cook until fragrant, about 30 seconds. Add tomatoes and vinegar and cook for 5 minutes to help reduce and thicken the sauce. Add salt and pepper and continue to cook another minute, tasting and seasoning as needed. Off heat add fresh basil and stir to combine.
For a little more flavor and just a couple more minutes cook chopped onions in the oil for 4-5 minutes until translucent and slightly browned. Then add garlic and follow previous directions.
