Description
Baking a single serving frittata. It is probably better to make a larger batch and store leftovers in the refrigerator and reheat as you want them.
Ingredients
Cooking Spray
Oil
Handful Chopped Onion
Handful Coarse chopped spinach
Shredded mozzarella cheese
1 Egg
Directions
Spray a 6oz ramekin with cooking oil. In a small pan sauté onion for a minute or two, then add spinach and cook for another minute until wilted. Put cooked mixture into ramekin and sprinkle cheese on top. Lightly beat an egg and pour over mixture.
Place in 400 degree oven and bake for 20 minutes or until top is golden brown.
