Sourdough Crepes

Description

From The Art of Baking with Natural Yeast by Melissa Richardson. A great recipe when you are feeding your starter and don't want to throw away the extra.

Ingredients

1 cup sourdough starter
1/2 cup flour
1/2 cup milk
1/4 cup sugar
3 eggs
2 Tbsp butter (soft)
1/2 tsp vanilla extract
1/4 tsp salt

Directions

Mix all ingredients together in a blender or food processor.

Heat a medium nonstick pan on medium heat and lightly spray with oil. When evenly heated (2-3 minutes) pour 1/4 cup of batter into pan and immediately swirl / tilt the pan to coat the bottom of the pan. Then let it cook until it stops bubbling and is no longer shiny on the top. It should be set and not sticky.

Repeat process 1/4 cup at a time, oiling as needed.

Top with yogurt, fresh fruit, cream cheese or get creative and try other ideas.
