Homemade Pasta

Description

Adapted pasta recipe from Bob's Red Mill Semolina flour. Modified use a mix of semolina and all purpose flour.

Ingredients

3/4 cups (4.5 oz) Semolina flour
3/4 cups (3.75 oz) all purpose flour
2 eggs
2 Tbsp Olive Oil
2 Tbsp Water
1/2 tsp salt

Directions

This recipe uses a mix of semolina flour and all purpose flour. You can do all semolina flour, just double its amount and leave out the all purpose.

Combine the flour and salt. Add beaten eggs, water and oil. Mix to make a stiff dough. Knead for 5-10 minutes or until dough is elastic. Wrap dough in a towel or plastic bag and let it rest for 20 minutes.

If you have a pasta roller / cutter, follow its instructions for making the pasta. Otherwise on a lightly floured surface, roll out to the desired thickness and cut as desired.

Bring a large pot of water with 1/2 tsp of oil to a boil. Add pasta and cook until tender (about 4 minutes). If you are making lasagna then there is no need to boil the pasta.
