Asparagus & Lemon Pasta

Recipe from a Dillons grocery coupon book that look good.

Ingredients

2 Tbsp. olive oil
1 onion, finely chopped
3 garlic cloves, minced
1 lb. fettuccine
1 bunch asparagus, ends trimmed, cut into 1-inch pieces
1/2 cup freshly grated Parmesan cheese
Zest from 1 lemon
Salt and pepper, to taste

Directions

Bring large pot of salted water to a boil. Meanwhile, heat 1 tablespoon olive oil in medium skillet. Saute onion until soft; add garlic and saute additional minute. Remove from heat.

Add pasta to boiling water. Cook according to package instructions -- in final 2 minutes, reserve 1 cup pasta water, then add asparagus to boiling water.

Drain cooked pasta and asparagus. Return to pot; add 1 tablespoon olive oil, onion and garlic mixture, parmesan, lemon zest and 1/2 cup reserved pasta water and mix. Season with salt and pepper; add additional pasta water as needed.
