Granola

Description

This granola is great for breakfast with yogurt or even to top ice cream. It is based on Americas Test Kitchen which has tons of great recipes.

Ingredients

1/3 cup maple syrup
1/3 cup packed (2 1/3 ounces) light brown sugar
4 teaspoons vanilla extract
1/2 teaspoon salt
1/2 cup vegetable oil
5 cups old-fashioned rolled oats
2 cups (10 ounces) raw almonds, chopped coarse
2 cups raisins or other dried fruit, chopped

Directions

Preheat oven to 325 and adjust the rack to the upper-middle position. Place parchment to cover a rimmed backing sheet.

Whisk the syrup, brown sugar, vanilla and salt in a large bowl. Whisk in oil until it becomes fully incorporated. With a spatula fold in the oats and almonds until completely coated.

Empty the mixture onto the baking sheet and spread to form an even layer about 1/2 inch thick. Using the bottom of a measuring cup, press the mixture to compact it down in the pan. Bake until lightly browned (40 to 45 minutes). Let it cool to room temperature (1 hour) before breaking it up to store. Add the dried fruit and mix it to incorporate.
