Description
Beef is tender if cooked mainly on lower temperature, but you want to start out on high to get everything cooking, then turn down.
Easy to make, just takes a long time to cook.
Ingredients
2 to 3lb. Roast
2 T oil
1t salt
1/4t pepper
1 (16oz) beef broth
1/2 med onion
1 med. Potato per person (not more than 6.
1 lb. Carrots,baby or chopped 1 in.
Directions
Put oil in skillet and get hot,then put in roast and sear until nice and brown on all sides.(Be careful greese will pop.) That keeps in the juices. Then put into Crockpot. Sprinkle with salt and pepper. Add big chunks of onion, potatoes quartered or eighth's carrots, baby or 1 in chunks. Then pour 16 oz of beef broth over all. This needs to be in large Crockpot or just use smaller amounts of everything. Potatoes need to be covered. Sprinkle more salt and pepper over vegetables. Cook on high for at least 3 hrs. Then turn down to low for 5 to 6 hrs. Depends on how big your roast and how many veg. Vegetables should poke easy with fork and meat should pull apart easy.
