Ingredients
1 tablespoon lemon juice
1 small garlic clove, minced to paste
3/4 cup plain Greek yogurt
1/2 cucumber, peeled, halved lengthwise, seeded, and diced fine (1/2 cup)
1 tablespoon minced fresh dill
3/8 teaspoon salt
Directions
Whisk lemon juice and garlic together in small bowl. Place the cucumber in a colander and toss with salt. Let the lemon mixture sit and the cucumber drain for 10 minutes. Stir together lemon mixture, yogurt, cucumber and dill. Cover and set aside.
For a creamy consistency, put everything in the blender until smooth.
