Shrimp & Chicken Cacciatore

Ingredients

1 lb. chicken tenders, cut into 2 inch pieces
2 Tbsp olive oil
2 green bell peppers sliced
1 red bell pepper sliced
1 onion sliced
8 oz white mushrooms sliced
1 clove garlic, minced
12 oz tomato paste
14.5 oz diced tomatoes
1 tsp. oregano
1 lb. raw shrimp, shelled and deveined

Directions

Sauté chicken in oil in large skillet for 5 minutes, remove and set aside. Add peppers, onion, mushrooms and garlic; cook 5 minutes or until tender. Add chicken. Mix tomato paste with 1 can water; add to skillet with diced tomatoes and oregano. Season to taste with salt and pepper. Simmer for 15 minutes. Add shrimp and cook for 5 minutes or until shrimp are just pink. Serve over rice if desired.
