Shredded Chicken in Chipotle Tostadas

Description

Tostadas de Tinga de Pollo. Makes 12 tostadas and serves 4-6 people.

Ingredients

2 Boneless Skinless Chicken Breasts
4 Chipotle Chiles in Adobo Sauce
1 Can Tomato Soup (10.75 oz)
1 Cup Onions, diced
1 Bag of Tostadas

Toppings
Queso Fresco, crumbled
1 Bunch of Fresh Cilantro, finely diced
Crema Mexicana or Sour Cream
Diced Tomatoes

Directions

Place chicken, chiles, tomato soup and onions into a crock pot. Cook on high for 3 hours or low 5 hours or until chicken is fully cooked.

Serve chicken mix on top of each tostada, drizzle with crema, lightly garnish with queso fresco, cilantro and diced tomatoes.
