Mushroom's Sausage Soup

Description

This recipe was found on the back of a box of mushrooms. It serves about four people.

Ingredients

8 ounces sliced white or brown mushrooms (approximately 2 1/2 cups)
10 ounces ground spicy sausage
1/2 cup each diced onions and green bell pepper
1 tablespoon minced garlic
2 tablespoons tomato paste
2 cups fresh or canned tomatoes, chopped
1 1/2 cups chicken stock
2 tablespoons oregano– salt/pepper to taste

Directions

In a 4 quart saucepan heat a small amount of oil over medium-high heat. Add the sausage and brown it for about five minutes. Add mushrooms, onion, bell pepper; cook for five minutes. Add tomato paste and garlic cook two minutes. Add chopped tomatoes, chicken stock, seasonings. Bring to a boil, reduce heat to simmer and cook until flavors are blended, about 20 minutes.
