Description
Creamy carrot soup without any cream
Ingredients
10 chopped carrots
3/4 cup chopped onion
3-4 cloves grated or chopped garlic
1-2 tablespoon grated ginger
1 teaspoon ground cumin
1 teaspoon ground paprika
1 teaspoon red chili powder
4 cups water (or vegetable broth)
salt to taste
red cayenne pepper to taste
pepper to taste
Directions
Sauté the onions with olive oil in a big pot for about 10 minutes at a low temperature so that the onions do not burn or brown too much. Add the carrots and sauté them as well until they turn slightly brown. Do not overcook. Add the garlic to flavor right before adding 4 cups of water. You can also substitute some of the water with vegetable broth. Add the rest of the spices, the cumin, paprika, chili powder, salt, pepper and the grated ginger and bring to a slight boil then reduce to simmer for about 30 minutes. Blend all of the vegetables and liquid together and voilà! Optional you can add some butter to the creamy soup
