Indian Rice

Ingredients

4 cups cooked rice
1/2 cup mayonnaise
1 finely chopped green bell pepper
1 finely chopped onion
1 peeled and finely cut-up tomato
1/2 Tsp. curry powder
salt, pepper and a squeeze of lemon juice

Directions

Fry onion till light brown, Add the green pepper and tomato and cook for a few more minutes. Add the rice and the other ingredients and heat thoroughly. Serve hot with meat or fish dishes or cold as a salad.
