Description
This recipe serves four people. It was found on the back of the Kroger fresh selections white sliced mushrooms box.
Ingredients
4 tsp olive oil, divided
1 Tbsp minced garlic (about 3 cloves)
16 ounces white or brown mushrooms, quartered (5 6 cups)
1/4 cup pitted green olives with juice, halved
2 cups halved grape tomatoes
1 Tbsp fresh time, finely chopped
1 Tbsp fresh basil, finely chopped
4 skinless to Tilapia fillets, salt and pepper to taste
Directions
Heat 2 tsp olive oil in large nonstick skillet over medium-high heat. Add garlic and quartered mushroom; cook stirring frequently, about 10 minutes. Add olives, tomatoes and herbs; heat for another two minutes, until juice is evaporated. Remove from heat, place in a bowl; cover with foil to keep warm.
In the same sauté pan, heat remaining 2 teaspoons oil over medium heat. Season the fillets with salt and pepper on both sides and place in pan. Cook three minutes, until nicely browned, gently turn and cook another three minutes. Return vegetables and herbs to skillet to warm, then serve.
