GoldenStar Fried Rice

Description

This recipe was found on the back in back of GoldenStar Jasmine rice.

Ingredients

2 cups jasmine rice, cooked
2 Tbsp peanut oil
1/2 cup scallions, finely diced
2 ounces bamboo shoots, sliced
2 ounces sliced water chestnuts
2 ounces whole baby corn, sliced
2 ounces broken straw mushrooms, sliced
1 carrot, peeled and sliced Julianne
1 egg, beaten
1/2 cup cooked meat or seafood (Optional)

Directions

In a medium-sized pan, sauté bamboo shoots, mushrooms, Water chestnuts, baby corn and carrots in peanut oil. Add scallions and cooked jasmine rice. Continue to mix the ingredients together, seasoning with soy sauce and salt to taste. In a small bowl, beat the egg and fry in a separate pan. When done, diced egg and add to the rice, mixing thoroughly. Serve immediately.
