Shredded Barbecued Beef

Description

Great for barbecued beef sandwiches. This recipe was halved to work with a smaller roast our grocer sells locally which is why so many things want 1/8 cup, I just eyeball the amounts and the measurements are there more for a guide.

Ingredients

1 boneless beef chuck roast 1 1/5 lbs
3/4 cup ketchup
1/8 cup packed brown sugar
1/8 cup barbecue sauce
1/8 cup water
1 tbsp soy sauce
1 tbsp honey mustard
1/2 tsp salt
1/4 tsp garlic salt
1/4 tsp pepper

Directions

Cut roast in half and place into slow cooker. In a small bowl combine the rest of the ingredients, then pour over roast in the cooker.

Cover crock pot and cook on low for 6-8hrs or until meat is tender. Remove the meat and let it cool for a couple minutes. Remove some of the excess fat from the liquid in the crock pot while waiting.

Shred the beef with forks (we find it easier to use a tong and a fork) and return it to the slow cooker. You can heat the meat back up for a couple minutes and it is ready to serve.
