Rice and Bean Casserole

Description

Serves six.

Ingredients

1 small onion, chopped
1 tablespoon vegetable oil
1 teaspoon chopped garlic
1 teaspoon oregano
1 teaspoon cumin
1 (15 ounce) cans diced tomatoes
1 (22 ounce) can black beans, drained
1 cup rice, uncooked
2 cups shredded Colby Jack cheese

Directions

Preheat oven to 350°F.

Sauté chopped onions in vegetable oil.

Add garlic, oregano, cumin, tomatoes, and beans to onion. Cover and cook on medium heat for 15 minutes.

Cook rice according to directions on package. Add rice to cooked mixture and mix well.

Spread mixture into casserole dish and spread cheese on top. Bake for 15 minutes or until cheese has melted.
