Whole wheat turkey vege lasagna

Description

Hearty and tasty lasagna with just a hint of cheesy goodness.

Ingredients

1 box whole wheat lasagna noodles, soaked in hot water until bendable

Meat mixture:
1 lb. ground turkey, browned
1 jar spaghetti sauce (I use Ragu Traditional)
1/4 c. finely chopped red onions, raw
2 t. chopped garlic cloves
Oregano, thyme, basil, onion pwdr, garlic pwdr, pepper to taste

Cheese mixture:
1/2 cup fat free cottage cheese
1/4-1/2 cup shredded white cheese (mont. jack)
Add a few spices to this mixture as well

Vege layer (just pick your favorite):
chopped fresh spinach, raw
chopped carrots, raw (slices 1/8 inch thick max)
chopped red onions, raw
chopped broccoli, raw
chopped zuchini, raw

Directions

Layer in a baking pan & bake for about 20-30 minutes at 400 degrees.

Meat mixture, then noodle layer, then cheese layer, vege layer....repeat until all ingredients are gone. Topping should be meat mixture to prevent noodles from getting dried out.
