Guilt Free Brownies

sugar free, gluten free, brownies. YUM!

Ingredients

16 oz organic black beans (soaked overnight, simmered for 4 hours or until soft. OR just use canned black beans, rinsed)

1/2 cocoa powder
4 T coconut oil, melted
1/3 c. xylitol
1.5 t. stevia
2 t. pure vanilla extract
3 organic large eggs
1/2 c. almond flour (or any flour)
1.5 t. baking soda
3 T. flax meal (optional)
1/4 t. sea salt
1/4 c. water

Directions

1. Preheat oven to 350 degrees. Puree the black beans in a food processor until completely smooth. You may need to add a couple of tablespoons of water, but don't let them get too soupy.

2. Mix all ingredients in a large bowl until just combined. Grease 9x9 inch glass pan with coconut oil (about 1 t.). Pour batter in the pan and bake for 40-45 min. Cool for at least one hour.

3. Optional: Use Vegan chocolate pudding recipe for frosting
