Vegan Mushroom Burgers with Avacado "mayo"

Description

Flavorful 'burgers' with a tangy mayo spread. Great with sweet potato fries!

Ingredients

1/2 red pepper
1/4 c. ground flax seeds
10 oz. mushrooms
1/3 c. walnuts (soaked overnight and rinsed)
1/2 white onion, chopped
1 jalepeno pepper, chopped
1 stalk celery, chopped
2 T. olive oil

Mayo:
1 avocado
1 t. agave nectar
1/4 t. salt
1/2 t. garlic powder
1/2 t. onion powder
1 t. paprika
1 t. vinegar

Directions

For raw vegan recipe: soak flax seeds 15 min, pure everything in food processor. Form into burgers and dehydrate for several hours.

Cooked version: Saute burger ingredients and cool, puree in food processor. Form into burgers, frying briefly in frying pan.

Spread avacado mayo over burgers and serve.
