Description
Healthy snack or appetizer, flavorful little mushroom bites.
Ingredients
12 oz. button mushrooms
2 stalks celery, minced
1 carrot, grated
1 med onion, minced
1 zucchini, grated
2 T. olive oil
2 T. agave nectar
2 T. balsamic vinegar
2 cloves garlic, pressed
1 T. basil
salt and pepper
Directions
Mince everything up and stuff it in the mushrooms. You'll have to cut out the stems to make a little cup out of the mushroom. Bake at 350 for about 20 min. Optional non-vegan variation: sprinkle with white cheese before baking.
Optional savory variation: saute filling first before stuffing.
