Description
Lefsa is our family tradition every Christmas, and we just can't get enough of it! Gramma even mails some across the country to those of us who didn't make it that year.
Ingredients
4 cups white russet potatoes
1/2 cup shortening or butter
1 3/4 c. flour
1 t. salt
1 t. sugar
Directions
Peel and boil the potatoes. Push through a "ricer" which will make little spaghetti sized strings...or mash very well. Cool.
Add the rest of the ingredients and combine well. Refrigerate until chilled through. Take an egg sized dough and roll very thin. Bake on a hot griddle and turn when small brown spots appear on bottom.
Store between paper towels. Serve warm with butter and sugar sprinkled on top. Roll it up and eat this Norwegian family favorite!
