Christy's Pot Roast

Description

Best pot roast, so tender you can pick it apart with your fingers.

Ingredients

1 beef rump roast
1/2 cup flour
1 white onion, sliced
2-3 T butter
6 carrots, sliced
5 small or 2 large potatoes, diced to 1" pieces
2 envelopes onion soup mix
salt & pepper

Directions

Fry onion rings in 2 T butter, and remove from pan. Coat roast with flour, salt & pepper (shake in a ziplock bag) Brown roast on all sides in the onion butter, adding more butter if needed. Grease a roasting pan, put carrots and potatoes in the bottom. Place roast on top of vegetables. Place onions on top of roast.

Mix onion soup mix with about 1/2 cup water, and mix with the drippings in the pan. Pour over the roast.

Bake 275 for 6 hours....our 350 for 3 hours. OR you can cook in the crock pot for 6 hours.
