Hearty, flavorful soup...with bacon!
Ingredients
1 small onion
1/4 c. chopped celery
2 T. butter
2 T. flour
1 t. chicken boullion
1/2 t. dill weed
1/4 t. curry powder
dash cayenne pepper
2 c. chicken broth
1 can (12oz) evaporated milk
3 c. cooked, mashed acorn squash
5 bacon strips, cooked and crumbled
salt and pepper to taste
Directions
Saute the onion and celery in butter. Stir in flour, boullion, dill, curry and cayenne until blended. Gradually add broth and milk. Bring to a boil, cook for 2 min. Add the squash and salt and pepper, heat through.
In a blender or food processor puree the mixture (may have to do this in several small batches). Pour into bowls and sprinkle with bacon.
