Mom's Key Lime Sponge Pie

Ingredients

1 Recipe Single Crust Pie Crust
2 eggs
1/3 C Butter, soften
1 C Granulated Sugar
2 t finely shredded Key Lime Peal( about 5-6 key limes)
1/3 C Key Lime juice (about 6 key limes)
2 T flour
1/8 t salt
1 C Milk (can use butter milk)

Directions

Preheat oven to 425

Separate egg yokes from whites; place whites in separate bowl and put in refrigerate (big enough bowl to whip in). In large bowl beat butter with electric mixer until fluffy. Beat in sugar until combined. Beat in egg yolks, Key lime peal, key lime juice, flour and salt until just combined. Add milk; beat until just combined (mixture will be thin and appear curdled).

Thoroughly wash beaters. Take egg white from refrigerator. and beat at med speed until stiff peaks form. Fold egg whites into beaten mixture. Pour into cooled pie crust.

Loosely tent top of pie with foil to prevent over browning, making sure the foil does not touch filling. Bake 10 min. Reduce heat to 350 and bake for 20 to 25 min until set in the center.

Cool 1 hr. on wire rack. Cover and refrigerate 3 hrs. Yum :)
