Description
Thick and hearty whole wheat tortillas that are great for healthy thin crust pizzas. Make chips out of them, or use them for wraps. Much cheaper than buying them!!
Ingredients
2 c. flour (I grind my own whole wheat)
1 tsp baking powder
1/2 tsp salt
2 T extra virgin olive oil
1/2 c. warm water (1 T at a time)
Directions
Mix all ingredients in large bowl. Knead on flour about 20 times until everything is incorporated. Rest 15 min. Make into balls about 1.5 - 2 inches in diameter and roll out with a rolling pin on the counter, or wax paper. While the balls are sitting on the bowl, cover with a moist towel or they will dry out.
Heat up a skillet on med-low heat, and place one tortilla in the skillet for about 15-30 seconds. Turn it over and cook for another 15 seconds. Stack them on a plate to cool. You may freeze them in a ziplock bag for several weeks. They thaw out beautifully.
Yield = 4 tortillas for every 1/2 cup flour used. I usually quadruple the recipe and freeze a bunch of tortillas.
Variation: Make chips for hummus by cutting into pieces and sprinkling with olive oil, paprika, garlic powder, and oregano and baking at 350 for about 15 min or until crunchy.
