Red Beans and Sausage

Description

Makes about 6-8 servings and is ready in about 30 minutes. I got this recipe from the Johnsonville sausage and it was a nice home cooked meal.

Ingredients

1 Package (13.5 oz) Johnsonville Andoulle Sausage, diced (fully cooked smoked sausage with beef)
1 Tbsp Olive oil
3 stalks celery, diced
1 medium onion, diced
1 medium green pepper, diced
3 cloves garlic, minced
1/2 cup water
2 bay leaves
1/2 tsp cayenne pepper
2 cans (16 oz each) light red kidney beans
4 cups cooked white rice

Directions

In a skillet, brown sausage in oil for 3-4 minutes. Add celery, onion, green pepper and garlic. Continue to cook until vegetables are tender. Add water, bay leaves, cayenne pepper and beans. Cover and simmer for 15-20 minutes. Remove the bay leaves. Serve over hot rice.
