Vegan chocolate pudding

Description

A creamy mousse-like dark chocolate pudding that will satisfy your chocolate craving AND it's healthy for you!

Ingredients

2 ripe Hass avocadoes
1 T coconut oil
2/3 cup cocoa powder
3/4 cup milk (I use almond milk)
4-5 T pure maple syrup or Agave nectar
2 t pure vanilla extract
(optional: carob or chocolate chips, & coconut shreds)

Directions

Scoop out the avacado and mix all ingredients (except choc chips and coconut) in a food processor until it is smooth. Top with choc chips and coconut if desired.

Store in airtight container in refrigerator for up to 2 days. Or freeze for up to several weeks, and it is like chocolate ice cream.
