Kase Knoephla (Cheese Buttons)

Description

Grandma Sackman's German cooking.
Mom always cooked some kind of meat, spare ribs or something to go with the Cheese Buttons, But I can just eat them by them selves for a meal. For leftovers, if you have them, fry in butter the next day. Tastes even better.

Ingredients

2-C flour
1-t salt
2 egg
1/2-lb. of dry cottage cheese (you can take regular cottage cheese and put in a strainer to get the liquid out.)
1/4-C finely chopped onion
salt & Pepper
Bread
butter

Directions

For Dough:

Put flour & salt in a large bowl.

In a small bowl beat one egg & add 1/2 C warm water. Pour egg mixture into flour & salt and make a stiff dough.

Pour egg mixture in slowly so you quite when you have a stiff dough.

Roll dough out thin but not see through & cut into 2 1/2 in. squares.

Put in a T of the cheese filling. Fold over to make triangles and press firmly together. If you put in too much filling it will come out when boiled.

Cheese Mixture:

Put 1/2 lb of dry cottage cheese, 1 beaten egg and the chopped onion in a med bowl. Sprinkle with some salt & pepper to taste.

In a large sauce pan 2/3 full of water & 1/2 t of salt, bring to a boil while making the other ingredients. Gently put in the cheese buttons and let cook for 10 min., taking out with a slatted spoon. Layer in a bowl with butter in between layers to keep from sticking. Chop up some bread into 1/2 in squares, melt some butter in a pan and brown bread crumbs and pour over top of Cheese buttons.
