Description
This easy breakfast recipe is very delicious. If blueberries aren't your thing it's easy to replace them with most any other fruit.
Ingredients
Sauce:
1/4 Cup water
1.5 tsp cornstarch
1.5 Cup blueberries
1/4 Cup sugar
Dash of salt
2 tsp lemon juice
Pancakes:
1 1/3 Cup milk
2 Eggs beaten
1 tsp vanilla extract
3/4 Cup flour
3/4 Cup whole-wheat flour
1 tsp sugar
1 tbsp baking powder
Dash of salt
1 Cup(ish) blueberries
Directions
Sauce:
To make the blueberry sauce, stir together the water and cornstarch in a medium-size saucepan. Stir in blueberries, sugar, and salt. Simmer 5 minutes or until blueberries cook down and the liquid is thickened, stirring occasionally. Remove from heat and stir in lemon juice. Cover and set aside.
Pancakes.
1. Combine all ingredients except blueberries in a mixing bowl.
2. Grease the griddle and heat over medium to medium high heat.
3. Pour batter on griddle. Press the desired amount of blueberries into each pancake. Push them down a bit so they are almost covered by the batter. Flip once bubbles start to appear in the batter.
Serve pancakes covered in the blueberry sauce.
