Mandarin Pork Chops

Description

This is really Simple. I don't get to make this to often because my husband doesn't like sweet pork nearly as much as I do. My kids think it is a real treat when I make it. I have added green peppers to the skillet while cooking it and removed them before serving, that added a real nice flavor.

Ingredients

4 pork chops
1/2 teaspoon salt
1/2 teaspoon pepper
1 tablespoon vegetable oil
2 tablespoons white vinegar
3 tablespoons brown sugar
1/2 teaspoon ground ginger (or can use fresh sliced)
1 (8 ounce) can mandarin oranges DO NOT DRAIN
Cinnamon (optional)

Directions

Season pork chops with salt and pepper. Heat oil in nonstick skillet over medium heat. Add pork chops and saute until golden brown on both sides. Stir together vinegar, brown sugar, ginger, mandarin oranges (including liquid from can) Pour over pork chops in skillet. When the juices from pork run clear and pork is fully cooked turn up heat and boil liquid for about 2 minutes or until about half the liquid is left in the pan. The oranges should start to caramelize some. Remove pork chops from skillet. Add corn starch (mixed with a little cold water) if you desire the sauce to be thicker. Spoon the sauce over the pork chops, sprinkle with cinnamon (optional) and serve.
