Honey walnut chicken (or shrimp)

I don't know if you have ever had honey walnut shrimp at a Chinese restaurant, but it is SO good. This recipe can be used with either shrimp or chicken. (Personally I like the chicken better) My kids eat it and they are pretty picky so it must be good. It is very simple to make. I serve over a good sticky rice with fresh green veggies steamed.

Ingredients

2 lb chicken (cut into strips) or
raw shrimp
1 cup corn starch
1 cup egg whites (about 5 eggs)
1 cup walnuts
Honey



SAUCE
5 tbsp honey
6 tbsp mayonnaise
3 tbsp sweet and condensed milk
(this may need a little adjusting to your own likeness. Start with this and taste it as you go, if it is to sweet I add a tbsp of lemon juice.)

Directions

Boil walnut on med high for about 15 minutes. Drain the water and put them in a pan or cookie sheet. Drizzle with honey and roast on 375 for about 25 minutes. Until the honey is bubbly and nuts start to brown.

Mix together corn starch and egg whites until blended and put the raw meat into the batter, let it soak for a few minutes.

Heat about 1/4 cup oil in the skillet and get to a boil on medium high heat. (beware of splatter) Add chicken to oil and let it cook for 2 minutes on each side or until lightly browned. Remove chicken, drain oil, put chicken back in pan on heat. Add the sauce to the cooked chicken or shrimp with the walnuts, mix gently, remove from heat.

Serve on top of rice.

If you do the shrimp it is made the same way but you want to devein and peel the shrimp.

I am usually cooking for many people and this recipe is pretty big, will serve about 8 people. If you want to make a smaller amount it is simple to just half everything.
