Vegan Mac-N-Cheese

Description

A close approximation of the real thing minus the cheese

Ingredients

1lb pasta (elbows or shells)

Cheese sauce:
2 cups unsweetened soy milk (I used Silk Unsweetened)
1 cup nutritional yeast
Half a block of tofu apx 6-8oz
2/3 cup canola oil
1/4 cup soy sauce
1 Tbs powdered onion
1 Tbs paprika
1 Tbs yellow mustard

Directions

1. Preheat oven to 350 degrees

2. Combine sauce ingredients in a blender and run until very smooth.

3. Cook the pasta using directions on the box, drain and place in a baking dish.

4. Pour sauce over pasta and mix until well combined.

5. Bake for 15 minutes.

6. Enjoy! I recommend sweet peas (as a side dish or mixed in) and a ton of black pepper.
