Grandma Jean's Waffles

Description

These waffles are so good that my son has been eating one every day for breakfast for over four years. I make this large batch and freeze them. Then, thaw in the toaster oven for 5 minutes for a fresh-waffle crunch.

Ingredients

8 Eggs
3 Cups oil
7 Cups milk
1.5 Cups sugar
2 TSP Salt
1 Cup powered milk
7 Cups flour
4 TSP baking powder

Ingredients can be cut in 1/2 or 1/4 for smaller batches.

Directions

Put eggs, oil, milk, sugar, salt and powered milk in a mixing bowl of 5 quarts or more. (I use a Kitchen Aid 5 qt bowl). Mix with an electric mixer until well blended.

Add flour and baking powder. Continue mixing until smooth. Add 1/4 to 1/2 cup additional flour to thicken batter if desired. (Runny batter makes fluffy waffles, thick batter makes dense waffles.)

Makes 24-28 7-inch diameter Belgian-style round waffles. Two or more waffle makers are recommended for this size batch.
