Leche Flan

Description

Leche flan is a very popular dessert in the Philippines... simple to make and yummy to eat! =]

Ingredients

1 can condensed milk
1 can evaporated milk
8-10 egg yolks
1 tsp. vanilla extract
Sugar (for caramel)

Directions

For the caramel:

1-2 cup sugar

3/4-1 cup water (optional)

In a saucepan, caramelize the sugar you need to coat the pan for the flan. [It may take longer but if you boil the sugar with some water it is less likely that you will burn the sugar]

Pre-heat the oven to 370 degrees.

Mix the condensed milk, evaporated milk, egg yolks (NO WHITES!), and tsp of vanilla in bowl.

Gently pour the mixture on top of the caramel

Place the Leche Flan pan in a hot water bath and bake for about 45 minutes. You can tell when the Leche Flan is cooked by inserting a knife & if it comes out clean- it is cooked.

Let cool then refrigerate.

To serve: run a thin knife around the edges of the pan to loosen the Leche Flan. Place a platter on top of the pan and quickly turn upside down to position the golden brown caramel on top.
