Description
This fried rice recipe is very versatile. The precooked sausage that is mentioned below can be replace by smoked ham, beef or any other type of meat. Try different combinations to see what you like. You can also remove the beef and eggs and try doing chicken or shrimp. A great way to get ideas is when you eat at chinese restaurants, look at what types of things they put in their fried rice.
Ingredients
2 cups uncooked rice
4 large eggs
1/2 or 7oz precooked beef sausage
1/2 bag or 5oz peas
4 cloves of minced garlic
Salt, Pepper
Soy Sauce
Directions
You will want to cook the rice 3 to 4 hours prior to making your fried rice but preferably up to one day prior. Once it has cooked and cooled a bit, place it in a container in the fridge for the wait time. This ensures that the rice is fully cooked (no hard center) but gives the outside some time to dry out. When you cook the rice again it will soften up again but will prevent it from turning to mush which can happen if you make your fried rice right after you finish cooking the rice. Usually for two cups uncooked rice, use 2 to 2 1/2 cups water.
Add 2 tbsp of oil to a large pan or wok and bring to medium high heat. Add beaten eggs to the pan and scramble them. Be careful not to over cook the eggs, you want them to be very moist, make sure to stir the eggs while cooking so that you do not start to brown them on any side. Once done, place on a plate or bowl and clean your pan carefully as it will still be hot.
Add another 2 tbsp of oil to pan and bring back to heat. Saute the garlic in the oil just till they begin to brown. At this point you will add in your beef sausage or any other raw ingredients that must be cooked through. Once cooked, add in the peas if frozen, if not you can add them after the rice. Let the peas cook for a little bit and then add your pre cooked rice.
You will want to make sure to continuously stir the ingredients at this point as the rice tends to stick. Try to break up any large clumps of rice so that it mixes in with the other ingredients. Once mixed in, add your egg and continue to mix as well. You can now add your salt and pepper and soy sauce to taste. When adding your soy sauce, pour it around the edges of the pan and not directly onto the rice, and mix it until it is fully combined with the rice. Take a taste to see if it needs further seasoning and then place into a bowl or serving dish.
