Mom's Salad, Fruit and Nuts

Description

This is a mix that you can keep in the refrigerator and add to Romaine and Spinach. Great for lunch
Makes about 5 Cups

Ingredients

Yellow Squash
Zucchini Squash
Roma Tomato
Broccoli
Carrots
Dried Cranberry's
Diced Almonds
Black olives

Directions

1/2 of small yellow and zucchini squash. (I take slices and cut twice one way and twice the other)

1 roma tomato's chopped 1/4 in.

8 broccoli florets and stems chopped in 1/2 in. pieces.

1/2 C straw carrots chopped in 1/2 in. pieces

(you can use thinly sliced carrots)

2/3 C dried cranberry's

2/3 C diced almonds

1/2 Can black olives chopped in half

Mix all ingredients together and store in container in refrigerator.

We use 1/2 to 1 Cup on top of Chopped Romaine and spinach that we also store in a container in refrigerator.

It will keep 3 to 4 days.

I like using 2T Ranch mixed with a little Ott's original, or Raspberry Vinaigrette, something a little sweet, Or use your own favorite dressing.
