Mom's Salad, Mediterranean

Description

This is a mix that you can keep in the refrigerator and add to Romaine or Spinach. Great for lunch
Makes about 5 Cups

Ingredients

Yellow Squash
Zucchini Squash
Roma tomato
Broccoli
Red Onion
Straw Carrots
Green Olives
1 Can black beans

Directions

1/2 of small yellow and zucchini squash chopped.(I cut slices twice one way and then twice the other)

1or2 tomato chopped 1/2 in. pieces.

8 florets and stem of broccoli chopped into 1/2 in pieces

1 thin slice of red onion chopped

1/2 C of straw carrots chopped 1/2 in(you can use thin slices carrot instead of straw)

1/2 C of green olives sliced in half

1 Can black beans rinsed and drained

Mix all together and store in container in refrigerator. Will last 3 to 4 days

We add 1/2 to 1 C on top of romaine and spinach. I like using 2T ranch mixed with 2T Balsamic Vinaigrette or try your own favorite dressing.
