Description
These are a fast, healthy, easy snack for everyone to enjoy. They are great for a little day hike rejuvination. A food processor is needed for this recipe.
Ingredients
Dates
Cranberries
Raisins
Dried apricots
Any other dried fruit
An assortment of nuts (Raw is preferred)
Shredded coconut
spices of your choice (nutmeg, cinnamon)
I do not have the precise measurements, but they really are not needed. Just keep mixing till you get the consistency you like.
Directions
Put all dried fruit in a bowl. Add water and let the fruit soak for a half an hour. After 30 minutes have passed, drain the water and put the dried fruit in the food processor along with your choice of spices. Blend till mix becomes a thick paste. From there, remove the thick paste and put in a separate big bowel. Go back to the empty food processor and add your nut selection. Blend the nuts. Personally I like to take half of the nuts out after they have been chopped in small pieces, and then blend the rest till it looks like sand. Add all nuts to the thick dried fruit mix. Dig your hands in and mix the nuts and fruit together. Once mix is blended, roll them into golf size balls. Take individual balls and roll them around in the shredded coconut. And your done!!
